For "7K bucks" (uh, that's $7000.00) they could have installed a new Mercedes-Benz long block and taken you and a friend out for a nice steak dinner at a 4 Star restaurant. Maybe you mean $700.00, that'd be closer to what a head gasket job would cost.
The dealer should be able to provide some sort of printout of the service records. I don't think it's going to matter to the adjuster either way that a bunch of mechanical work was just done.
