I did this a couple of years ago to replace the vacuum pods - it took me 18 hours spread out over 3 days, doing it at a leisurely pace. Others can do it faster. I don't know how bad the evap removal is, but the dash itself is not too bad, just very tedious, with a few difficult spots.

If you have a digital camera, I strongly recommend taking lots of pictures, especially of the more complicated fasteners. This will help you arrange the pieces back together, especially for the ones with screws and clips and nuts all in one fastener. Some of them are not intuitive...

Also, bag and label fasteners for specific parts of the dash.
