It's difficult to find a more mechanically straightforward vehicle to restore. If the rust has been taken care of, it shouldn't be too bad.

I bought a 59 Ford F100 to restore (somewhat) and use as a work truck. It's not quite as sexy as a 56 Era car but it's pretty cool. Working on it is a doddle and parts can be found easily at Autozone, Napa and all the likes.

I think you'll like it.
