Sausage Making Question

Sausage Types Chart

Now see picture below of the local butcher. It isn't mentioned in the article so can anyone tell me if it is a new type of sausage and what meat was used and how it is made exactly?

Any type of sausage made by underemployed prostitutes?

The chorizo you find for sale here is usually a fresh sausage and requires cooking before eating.

I made a dish not long ago that goes well with tortillas. I gave away a lot of it to friends, so I ended up with extra tortillas. To make something to eat them with, I cut up sausage into small pieces and fried in bacon fat. I did the first batch with bratwurst and it turned out great. Second batch was hot Italian sausage and may even be a bit better.

Send it to me in a frozen box. Sounds great.

So if it is made by a "Ho", What sort of meat? Bobbit's? How did they make the sausage? Sure, you slip the meat into the skin but using what device? Does that give it a different "flavor"? Or would it be dependent on whom the "Ho" was with that day?

I haven't been there yet. Maybe they have a 2 for 1 special where you buy a prosciutto and get a prostituta? Cross promotion for meat and hookers? Or book a session with a prostituta and get some prosciutto for dinner?
