Going to drop the pan filter and drain torque converter if possible. How much fluid should I plan to have on hand to replace.

it really depends on how much you can get of your tranny. I make sure i have 8 quarts, but usually only need 5 or six

add 6 quarts.. turn it on, shift through all the gears.. then check the level and add a little drive it, get it to temp, check level on a flat level surface in idle... and add until desired level is achived
