Italian tune up?

what is an italian tune up?

i am guessing it is stomping on the acclerator and running up the rpms/mph high

here is my main question

do i just need to stomp on it from 30-40mph and run it fast and hard up to 80mph

or do i need to run it from 40mph up to 80-100mph and keep it there for a few minutes


if trying to stomp on it some with my 99 e300 on the interstate, if i let the car coast down to 45-50mph and then stomp on the gas it is at 100mph in no time, a few seconds

then i am off the gas and coasting back down and wondering if this may be defeating the purpose somewhat
