As regards eating the duck eggs, I came across a similar situation years ago, except that the householder was a very clever scientist and she wouldn't touch the eggs, except to bin them, purely because of the risk of salmonella. There is of course, the pesticides and fertilisers issue as well. Both can be absorbed into the fatty tissue and end up in the eggs, so you take your chances. |

Ummm, I'd give this one a big "NO"! I wouldn't eat anything which came out of a man-made lake in Chandler.
Pesticides, fertilizers and "re-claimed" water are definitely in the water. Do a quick search on "Painted Rock" reservoir for a scare. |

Duck eggs have a proportionally larger yolk : white ratio than chicken eggs. Used for baking, they're great as the added fat makes whatever you're baking nice and moist. We save our duck eggs for that. They're too strong flavored for our tastes when eaten alone. A simple freshness test for any egg of unknown age: Put the egg in a flat baking dish or other container deep enough to cover it with water double deep. If the egg is fresh it'll lay flat in the water. If it's too old to eat, one end of the egg will rise and essentially make it try to stand up on end. This is due to gasses emitted inside the shell as the egg ages.

i'm no scientist but it is hard to imagine any natural environment as polluted as the confinement cages most domestic chickens exist in.

So tell me Tom, would YOU have eaten anything which came out of the Indianapolis stretch of the White River during the 1960's through the 1990's? That at least was flowing water constantly renewed.
"Man-made lake" in Chandler (former home to some of the most extensively pesticide and herbicide sprayed areas in the state) is not what I'd call a "natural" environment. |

in the sixties probably nobody realized how polluted it was.
as for the duck eggs, I don't imagine that they would be as directly polluted as fish who live in the water. the ducks just swim in it. you might be right though. the domestic fowl which most of us get eggs from live in confined areas and aspirate each others waste. that's why eggs are infested now with salmonella. these free walking semi domestic ducks surely are not infested with salmonella. the pollutants tend to build up in the fat of fish over their life. someone may know if such pollutants reside in eggs. i really don't. http://www.britishblades.com/forums/showthread.php?8616-Are-wild-duck-eggs-safe-to-eat here is a link to a discussion about the safety of eating semi wild duck eggs: although it is illegal to gather and eat wild duck eggs a domestic or half domestic duck that resides year round would not seem to me to qualify as a migrating bird. of course what matters is what the game warden thinks about them.

There are a few small studies that indicate that commercial "free range" eggs produced in urban environments are higher in PCBs and some other delightful substances. Those ducks near you are essentially birds of the same feather as those chickens who are free ranging in urban environments. I don't believe I'd eat their eggs, less'n I was real hungry.

Scrapple is ground finer I think.
French persons have pate, we have SPAM. There is precious little difference between the two. Sliced SPAM, fried in grease till it's almost burnt makes one heck of a sammich. I've always found it interesting that nobody will admit to liking it, but gazillions of cans of it are sold each year.
