And just like any car when the AC Compressor is on it creates a huge draw on the engine. Even though you have a 2.6 you will still have a draw due to it. Does the car hesitate when the AC is off? If not then it is the AC, it takes a second for the Climate Control to sense you hit the gas and disengage the AC Clutch. Even my W203 with the lil 4 banger in it has a huge draw due to AC, so much so it makes it jerky shifting the 6 speed due to Rapid RPM Drop when you let off the gas. I do not drive it enough with the AC on to get used to how much extra go pedal I need to keep it smoother. No biggie but I do know when I want to take off it does hesitate for a split second due to Compressor cut-off.
The W201 is supposed to disengage the Compressor under 2000RPM, except when at idle, and also when floored so that you have more power. But with an engine that may need a tune-up or some fuel injector cleaner the hesitation will be amplified.
As for the oil sensor, have you actually verified the level of the oil at the dispstick?
