That's a pretty sick looking kit! Worth it for the novelty alone. That aging barrel would be cool plunked on a bar!

I'll let you test run the production first, though.

It's kind of funny, "poor" kept making it through their spell check (in place of "pour"). Did Hattie write the descriptions for them?

I have collected the stuff to make it on my own before I found this kit. I would have bought this if I'd seen it before due to the extras that come with it.

I heard that too, but I thought the stuff made legal for sale in the US is a lesser (thujone content) version of what I was able to purchase online from France. 70% alcohol will rock you no matter what, but there is definitely something to the thujone.

Either way, I always like having the option to make things myself, oversee the process and make adjustments for my preferences.

They are a little late Absinthe is now (just recently) available (legaly) in the US.

A faux-Absinthe liqueur called Absente, made with Artemisia abrotanum instead of Artemisia absinthium (wormwood), is sold legally in the United States however, the FDA prohibition extends to all Artemisia species, including even, in theory, Artemisia dracunculus, known as tarragon.

However, Absinthe is sold in most US retail liquor stores, or can be acquired via internet or catalogs because the export version made for the United States does not contain wormwood.

It tastes like a cross between Sambuca and NyQuil ... in a good way.

I just tasted it straight to refresh my memory and it has a faint sweetness, but once you drip water over the sugar cubes it sweetens it up.

I deal with bruxism and try to keep my alcohol level to a minimum. I think you'd have to drink LARGE quantities for that outcome.

It's definitely more than a drunk buzz. It's very similar to Ms. Jane, who I haven't visited in many years.

BTW, I'm on my 9th and 10th gallon of kombucha now and finally got the process honed to have the proper "sour" for my tastes. My favorite so far is 60% black tea, and 40% pomegranate raspberry green tea.

Glad you got into KT, you will feel the benefits gradually. How about Kefir?

I will update on the kit, even if its half as good as the one I had in France its well worth it.

I kind of backed off on the kefir since I was using starter powders. I need to find some kefir grains but am leery of purchasing them from just anyone online.

I was able to get my scoby and starter liquid from a friend to get going with the KT.

While you wait for your home brew absinthe, check out www.absintheonline.com. That's where I bought the bottles I have. I bought 3 bottles and am down to about 2" in the bottom of a bottle with a deep punt.
