BBQing or Grilling?

What is the difference?

A person who is into cooking said that BBQing involves cooking with a sauce of sorts, where grilling is cooking meat without sauce....


Then someone told me they have BBQ without sauce....




So, what exactly is the difference?

BBQ is low and slow
Grilling is hotter and faster.

You can have sauces and rubs with grilling, but it has to be able to handle the heat without burning or charring. BBQ, because of the indirect cooking methods, picks up more flavors from sauces and smoke. The increased cooking time also mean the use of bigger and usually more economical cuts of meat.

lol, had this debate on another forum.
MTI's got it pretty well covered. Barbecue is long, low heat, and indirect. Grilling is fast, high heat, and right over the fire.

Bar-b-que = Noun -> pulled pork or beef

Grilling = Verb -> the act of cooking on a grill

Like those pork ribs I cooked without any sort of sauce for about 5 1/2 hours on the 4th. Yum.

I went to NC for the weekend and didn't have barbeque even once! Damn!

I did cook some fine steaks out on the grill, though.

I agree with MTI. Having said that, I wouldn't worry too much about the name. One of the few universal truths I know is

Meat + Fire = Goodness

BBQ also involves soaking the meat in brine and maybe even some post grill cooking in a crock pot... The main thing is that BBQ = meat falling off the bone Grilling = meat that is still intact enough to need a knife.

Both are good...

Neither involve using gas...
