So what did'ja eat?

Last night: Tamales de chivo con chile colorado (goat red chile tamales)
Posole
Frijoles Borrachos

Today: 21 day dry aged prime rib , tarragon, wild mushroom demi-glace
roasted brussel sprouts with walnuts and bacon
puree of sweet potatoes with maple syrup and caramelized sweet onions
herb salad with pears and parmigiano reggiano
bourbon pecan pie with spiked whipped goat cream

Last night was women's work, They made a hundred tamales yesterday after the goat was stewed down the day before. Today it was my turn. I aged and cooked three full 8 bone rib roasts. There's a half one left.

Everyone's gone but the kids, the fire feels good. If I can just get my wife to turn off the damned carols, Christmas is a FULL YEAR away. Can I get a hallelujah chorus on that???

Yep, spends about 7 days in the fridge marinating. My mother makes it...its a Christmas tradition since I was born and her mother before that (though we're not German, not sure how that works). It is indescribably delicious.

The trimmings are traditional Slavic--Baby Carrots in mustard/honey gravy, mashed potatoes, pierogies, kielbasa, cabbage and sweet corn soup, smoked ham, all which are incredible with the gravy on top of them. I think we had some beets and greens on top of it, my mom can really cook a fantastic meal

Picanha (rump cover) chateau potatoes, green beans with brown butter and almonds. Dessert was cranberry pound cake with lemon curd creme anglaise.

Nah its basically a slow-marinated pot roast in veggies, wine, vinegar, and spices, sometimes beer, stays marinating for 7-10 days in my experience. It is seriously unbelievable. I've never had anything like it. Heading for leftovers to suffice the drooling as we speak

Large Gulf shrimp steamed in beer and vinegar spiced with Old Bay, filet of flounder stuffed with crab meat and drizzled with Maryland crab imperial sauce, twice baked taters with garlic and cheddar, relish tray, apple-cranberry pie with 'neller ice cream.
