I think all 560's have self levelling but on the 500's it was optional. The only main difference between a 500 and a 560 was the motor, all the rest of the components are the same so you should be able to use 500SEL springs and shocks in the rear. You will need to either disconnect/remove the pump or loop the fluid lines near the diff so that the fluid returns back to the pump.
