Another thing I found out while driving around for a couple days testing is that the ECU doesn't care whether the MAF sensor is plugged in or not. It's just looking for a signal on the yellow wire.

Very nice find and observation(s) thus far... What do you think your chances are of completely removing the EGR sensor and replacing it with a "block plate" on the intake?
