i used to eat a lot of dried apricots. but i discovered they have a lot of sugar in them and if i eat anytning with much sugar in the evening my sleep is disrupted, so i quit that as a snack.

Me too! I usually have a bag of them on the desk at all times. No refrigeration required and they're healthy.

I never have had the sugar problem. I wonder what the cause is in your case?

i think it is hereditary. my dad had it. i have it. some of my 7 sibs have it. my daughter has it.

i suspect there is some abnormality in our pancreas.

my dad's younger sis died at 60 from a pancreatitis attack. her daughter (40 something) has had pancreatic attacks too. since her mom died from it she realized what was up and the docs were on top of it.

my aunt died because the docs didn't realize what was up til too late.

also she went into the hospital on christmas eve. not many docs around then. not a good time to get seriously ill.

Any fruit or vegtables, 'in season' is the way to go if you can, twice a day... the key to 'good' is preparing in advance. Roast a weeks worth of meat or what suits your fancy, then tuperware it and into smaller tuperwares to port along. 1 1/2 hours a week of prep will take away all your wasted worries. Pick up a cookbook and you'll eat like a king.

#1.) Slices of apples, with a favorite brand of peanut butter smeared on it...

#2.) The little triangle Triscuits with PB on 'em...

#3.) Hot-air popped corn, no oil and little, if any, salt...

#4.) 5 almonds, no more than twice an hour, and no more than 3 hours worth a day...a little less than the Almond Growers Association would like you do ("A can a week is all we ask...")

#5.) For my fellow employees: I have 3 M&M Dispensers in my office, two are the "gumball" style and the third is the "Peanut M&M" in a LAY-Z-BOY recliner. The two "gumballs" have M&Ms and SPREES in 'em and LAY-Z-BOY has the peanut M&Ms only. They put a little "green" in my Harley mug, and I fill the dispenser for them. Believe me, they're getting the better end of the deal here!! Now, I don't eat the stuff myself. I look too much like the Peanut now!!

#6.) Here's one from my MIL: A 2-fisted sized green pepper, sliced in half and de-seeded, then one half thinly sliced and piled onto two pieces of buttered white bread, turned into a sandwich, then the whole thing is eaten and washed down with a 16-oz. glass of whole white milk. She says that that little concoction got her and her brother throught the Depression in down-state Illinois, around the railyards of Decatur.

Yeah, it freezes. It's origin was as a way to scrap-up and extend all the organ fragments then mixed with spices & vegetables and cooked with rice, then stuffed into a casing. So we're not talking expensive sausage. It's mostly rice, spice, fat and the odd portion of meat. It has got to be one of the main reasons our heart disease rate leads the nation. Maudite, c'est ce bon chers!

What's a cajun cook out? go to www.donspecialtymeats.com. 5 lb. box of frozen boudin. I prefer to steam it in a veggie steamer than boiling, btw.

in between whippings, i snack on dried fruit, rice cakes and smoked almonds.

Wow, I didn't know anyone else ate smoked oysters I don't outside of the duck blind and eat them with tabasco on a saltine cracker, chased with bourbon/peach brandy. If you guys haven't had them, also try the baby clams that come in the same type of tin.

So many of the 'specialty' meat shops have opened up down there in recent years, fresh boudin is expensive as any of the local sausage. Another trash meat gone trendy is beef tongue--$11/lb stuffed

I was in Augusta this weekend and missed Easter down there for the first time in years--heard it SLEETED rain in Rayne
