Deer, elk, cattle, sheep and goats are better hung by the back legs. For several reasons.

1. Beheading the animal in this position allows the most complete bleed out.
2. Front leg hanging stretches the spine more and can ruin some cuts. Especially on elk and cattle.
3. Back legs are stronger and meant to support the animal's full weight.
4. If the animal is not beheaded before hanging by the front legs, mucus and other nasty head juices will run into the organ cavity after gutting, potentially fouling the meat.
I don't know anybody who hangs anything by it's front legs.
