Do a complete brake overhaul including rubber hoses.
No sense in making it run if it won't stop.

The problem with an old gas tank is grunge and rust. At some time it would be wise to look inside. It is better to have it cleaned and coated before it rusts through, unless a spare is available.

You will hate yourself if you go the bias route. Freeway driving is miserable and cornering is a disaster.
When I switched from bias to radial it was like buying a new car.
